Broccoli Salad Recipe

Dietician Mary Lavanway shows us a salad idea for all those summer barbeques.

Broccoli Salad

Serves: 6 (2/3 cup each)

Ingredients:

3 cups broccoli florets
1/4 cup finely chopped onion
3/4 cup chopped celery
1/3 cup (1 1/2 ounces) Cabot® Sharp Light Shredded Cheddar Cheese
1/4 cup Hellmann’s® Light Mayonnaise
1/4 cup nonfat plain yogurt
2 tablespoons honey
1/2 teaspoon salt
1/8 teaspoon McCormick® Pure Ground Black Pepper

Senior Spotlight: Strawberry Pie / Meals on Wheels

Vicki Haskell was in the kitchen with Joy Wednesday for this week’s Senior Spotlight. She mentioned a fundraiser on Thursday at Applebee’s from 4:00 PM – 9:00 PM. Simply meet Vicki in the parking lot of the Bangor K-Mart to recieve a flyer, then bring the flyer to Applebee’s, and they will donate 15% of your bill to Meals on Wheels.

Serves: 4

Salad Ingredients:

1 cup cooked quinoa, cooled
1 cup cooked white cannellini or black beans, rinsed & drained
1 tablespoon red wine vinegar
1 pkg. (5oz) Fresh Express 50/50 Mix
½ cup chopped red bell pepper
1 cup grape tomatoes
1 cup cucumber, peeled seeded and chopped
¼ cup fresh cilantro, chopped coarsley
1 avocado, cut into pieces

Ingredients:

4 (4oz) boneless, skinless chicken breast cutlets (1lb. Total)
2 tablespoons mango chutney or mango salsa
2 tablespoons fresh lime juice
2 teaspoons grated fresh ginger or ½ teaspoon McCormick Ground Ginger
1 tablespoon olive oil
¼ cup orange juice
1 teaspoon minced fresh oregano or ¼ to ½ teaspoon McCormick Oregano Leaves
½ teaspoon hot pepper sauce
2 garlic cloves, minced

Kale Salad with Apricots, Avocado, and Cheddar

Dietician Mary Lavanway  shows us how to make a kale, apricot salad that can help with Premenstral Syndrome (PMS)

Kale Salad with Apricots, Avocado, and Cheddar
Serves: 4
Ingredients:
6-8 ounces Fresh Express® Baby Kale Mix
3 whole apricots, sliced
2 ounces Cabot® Sharp Light Cheddar, diced
1/4 cup sliced almonds
1/3 cup Hannaford Cannellini Beans
1 tablespoon extra virgin olive oil
2 tablespoons red wine vinegar
McCormick® Pepper Blend, to taste
1/2 avocado, sliced
Directions:
1. Tear larger leaves into bite-sized pieces and place into a medium-sized salad bowl.
2. Add sliced apricots, diced cheese, almonds and beans.
3. Whisk oil and vinegar and pour vinaigrette over salad, tossing lightly. Add pepper to taste.
4. Just before eating, slice avocado and place over salad.
