Grilled Mango Chicken
Serves: 4

 

Ingredients:

4 (4oz) boneless, skinless chicken breast cutlets (1lb. Total)
2 tablespoons mango chutney or mango salsa
2 tablespoons fresh lime juice
2 teaspoons grated fresh ginger or ½ teaspoon McCormick Ground Ginger
1 tablespoon olive oil
¼ cup orange juice
1 teaspoon minced fresh oregano or ¼ to ½ teaspoon McCormick Oregano Leaves
½ teaspoon hot pepper sauce
2 garlic cloves, minced

Kale Salad with Apricots, Avocado, and Cheddar

Dietician Mary Lavanway  shows us how to make a kale, apricot salad that can help with Premenstral Syndrome (PMS)

Kale Salad with Apricots, Avocado, and Cheddar
Serves: 4
Ingredients:
6-8 ounces Fresh Express® Baby Kale Mix
3 whole apricots, sliced
2 ounces Cabot® Sharp Light Cheddar, diced
1/4 cup sliced almonds
1/3 cup Hannaford Cannellini Beans
1 tablespoon extra virgin olive oil
2 tablespoons red wine vinegar
McCormick® Pepper Blend, to taste
1/2 avocado, sliced
Directions:
1. Tear larger leaves into bite-sized pieces and place into a medium-sized salad bowl.
2. Add sliced apricots, diced cheese, almonds and beans.
3. Whisk oil and vinegar and pour vinaigrette over salad, tossing lightly. Add pepper to taste.
4. Just before eating, slice avocado and place over salad.

The Family Dog Mango-Pineapple Salsa

Mango-Pineapple Salsa

Ingredients


1 Mango-

¼ Pineapple

½ red Onion

1 Jalapeno-seeded

1 Sweet Bell Pepper

¼ Cup Cilantro

½ tsp. Sugar

Salt to taste


Tools:

Mixing Bowl

Chefs Knife



Peel Mango and Cut into a small dice, Core Pineapple and Quarter . Trim Rough flesh from pineapple and cut into a small dice. Peel and small dice red onion. Cut core out of bell pepper and discard then rest of pepper into a small dice. The amount of Jalapeno is up to you depending on how much heat you like, if you enjoy the heat more, try not discarding the seeds before you add more jalapenos. Mince up the cilantro . Add all ingredients to mixing bowl, incorporate all together, adjust seasoning if necessary . Wrap and store in fridge for 15 minutes to let flavors develop, enjoy.

Hannaford’s Mary Lavanway shares the healthy recipe: Ragú® Gazpacho

Ragú® Gazpacho
Prep Time: 25 minutes
Serves: 6
Ingredients:
1 medium cucumber, peeled, seeded, and finely chopped
1 small onion, finely chopped
2 medium red and/or green bell peppers, finely chopped
1 cup water
1/4 cup red wine vinegar
2 tablespoons olive oil
1 1/2 cups Ragú® Old World Style® Traditional Pasta Sauce
1 tablespoon fresh cilantro, chopped
2 teaspoons McCormick® Poultry Seasoning
1/2 teaspoon hot pepper sauce, or more to taste
Directions:
1. Combine all ingredients in large nonaluminum bowl. Season, if desired, with salt and ground black pepper.
2. Process 1 cup of mixture in blender until smooth; pour back into soup and stir.
3. Cover and refrigerate at least 1 hour.
