Cool as a Cucumber Soup

Servings: 4


4 small seedless cucumbers, peeled and grated
1 Tbsp. fresh lemon juice
1 bunch fresh mint leaves, chopped
1 tsp. McCormick® Dill
1/2 tsp. McCormick® Garlic Powder
2 cups plain Dannon® yogurt
1 Tbsp. olive oil
1/2 Avocados from Mexico®


1. Combine the grated cucumber, lemon juice, mint, dill, garlic, yogurt, olive oil and avocado
in a large bowl. Stir.

2. Pour mixture into a blender and blend on high until smooth.

3. Serve immediately or chill.
