Wellness Wednesday: Ginger Apple-Cheddar Slaw 

Dietitian Mary Lavanway was in for this week’s Wellness Wednesday making a twist on coleslaw.

Below is the recipe for the slaw Mary made on air:

Ginger Apple-Cheddar Slaw

Servings: 4


2 Tbsp. Hellmann’s® light mayonnaise
1 Tbsp. rice vinegar
1 tsp. finely grated peeled fresh ginger
1 Fuji apple
2 oz. Cabot® Sharp Light Cheddar, coarsely grated (about 1/2 cup)
2 Tbsp. coarsely chopped fresh cilantro or McCormick® Cilantro Leaves


1. In medium bowl, whisk together mayonnaise, vinegar and ginger.
2. Cut apple into quarters and cut away cores. Cut quarters into thin slices,
then stack several slices and cut into matchsticks.
3. Add apple, cheese and cilantro to bowl and toss gently to combine.
