Cool Peach & Watermelon Salsa 

Dietician Mary Lavanway is here to give us a summer recipe using the herb of the month thyme.

Cool Peach & Watermelon Salsa

Serves: 6 (1/4 cup salsa each)



1 cup chopped and peeled peaches

1 cup chopped seeded watermelon

3 tablespoons 100% orange juice or fresh squeezed

1 tablespoon chopped fresh mint or 1 1/2 teaspoons McCormick® Dried Mint

1 tablespoon finely chopped red onion

1/2 teaspoon McCormick® Thyme Leaves

Kashi® Pita Crisps




Mix all ingredients (except pita crisps) in a medium bowl until well mixed.


Cover. Refrigerate 30 minutes to blend flavors.


Serve with Kashi® Pita Crisps for a fresh, fruit-filled summer snack!




This recipe can also be used as a topping for chicken or grilled fish to make it into a

healthy & fresh summer meal.


You can also make a cool summer salad by adding this salsa to a bed of Fresh Express® Baby Kale Mix

and topping with a little olive oil and balsamic vinegar!
