Wellness Wednesday: Strawberry Orange Salad with Lemon Poppy Seed Dressing

Hannaford Dietitian  Mary Lavanway was in for this month’s Wellness Wednesday to talk about the benefits of antioxidants.

She a made a a Strawberry Orange Salad with Lemon Poppy Seed Dressing that is full of antioxidants.

Strawberry-Orange Salad with Lemon Poppy Seed Dressing
1 pint fresh strawberries, cleaned and quartered or sliced
4 navel oranges, peeled and segmented (or 1 [15 oz.] can mandarin oranges)
1/2 cup chopped basil
1/2 bag Fresh Express® Spinach, chopped
1/3 cup sliced almonds, toasted (optional)
Dressing Ingredients:
3/4 cup Taste of Inspirations® Greek Yogurt, plain or vanilla
3 tablespoons honey
Zest of 1 lemon, minced
2 tablespoons fresh lemon juice
1 tablespoon McCormick® Gourmet Collection™ 100% Organic Poppy Seed
1/4 cup olive oil
Salt, to taste

1. In salad bowl, mix together strawberries, oranges, basil, spinach and almonds.

2. To make dressing, in a separate bowl combine yogurt, honey, lemon zest and juice,
and poppy seeds in a food processor or blender. With the machine running,
drizzle in oil until combined well. Season with salt. Add dressing to salad and toss.
