Cooking with Cathy: Roasted Delicata with Honey & Oregano 

Cathy Speronis was in for this month’s Cooking with Cathy. She made Mediterranean dishes. The first one dish Cathy made was Roasted Delicata with Honey & Oregano. You can find the recipe below:

Roasted Delicata with Honey & Oregano

1 large Delicata squash
4 Tbsp. unsalted butter
1 Tbsp. & 1 tsp. clover honey
1 tsp. dried Mediterranean oregano
Kosher salt
Fresh ground black pepper


Preheat oven to 425°F. Line a baking sheet with aluminum foil, shiny side up and set aside.

Wash and dry Delicata squash. Remove ends and slice into 1/2″ slices.

In a small saucepan melt the butter with the honey and oregano. Stir to combine.

Brush the slices of Delicata on both sides with the butter mixture and place onto prepared baking sheet.

Bake for 10 minutes. Turn slices over with a spatula and cook for an additional 5 minutes until flesh is tender.

Remove from oven, brush the slices with remaining butter and serve immediately.
