Hannaford Dietician Mary Lavanway joined Carolyn Callahan with a couple ideas for healthy kids lunches.Pizza Roll-UpsThis easy pizza-inspired roll-up is a kid-pleaser.Add crunchy vegetables-and don’t forget the dip!Keep ’em smiling with watermelon cut intofun shapes with cookie cutters.Prep Time: 15 minutesServings: 1Ingredients:1 (8-inch) flour tortilla or a 1/2 lavash2 Tbsp. Ragú® Pizza Sauce12 leaves Fresh Express® Baby Spinach3 Tbsp. Cabot® Tomato Basil Cheddar, shredded, or Monterey Jack Shredded Cheese1/2 cup cucumber spears2 Tbsp. low-fat creamy dressing, such as Wish-Bone® Light Ranch1 cup watermelon cubes (or cut into shapes with cookie cutters)1 Kashi® Oatmeal Raisin Flax Cookie or Cherry Vanilla Soft-Baked Cereal BarDirections:1. Place tortilla (or lavash) on a plate and spread pizza sauce over it. Top with an even layer of spinach andsprinkle cheese on top. Microwave on High until the cheese is just melted, about 45 seconds.2. Carefully roll the tortilla up. Let cool for 10 minutes before slicing into pieces, if desired.3. Pack the slices in a medium container.4. Pack cucumber in another container, nestle a small, dip-size container among the spears, and add dressing.5.
