Not- So-Blackened- Shrimp2 lbs. of shrimp-16-20 size, no tails!1 Tbs of each: sea salt, black, red & white pepper, paprika4 Tbs butter¼ cup fresh lemon juiceCombine all spices in a shallow bowlToss shrimp in spices Melt butter in skilletOnce butter is bubbling-add shrimp. Cook until pink or 7-10 minutesTurn off heat, add lemon juice-in pan!Place on platterServe with grilled pineapple*Grilled Fruit *Place pineapple slices or wedges on hot grill or grill pan ***spray with pam before heating Each side should grill for 3-5 minutes to caramelize This can be used for watermelon & nectarine as wellWatermelon Salad4 cups watermelon–cubed ½ cup feta cheese¼ cup of fresh mint—chopped2 Tbs of balsamic raspberry vinegretteToss & enjoy
