In this segment she shares a recipe for After Holiday Turkey Salad with Curried Mango Chutney DressingRecipe Courtesy of Fresh ExpressIngredients:1 bag Fresh Express® Triple Hearts1 pound diced roast turkey1/4 cup slivered dried apricots1/4 pound fresh snow peas3 oz. Taste of Inspriations® Mango Chutney1 teaspoons McCormick® curry powder2 tablespoons Hannaford® cider vinegar2 tablespoons my essentials® extra virgin olive oil1 cup Kashi® 7 Grain Sea Salt Pita Crisps3 tablepoons roughly chopped flat leaf parsleyDirections:Make the Dressing:1. In a medium bowl combine the mango chutney with the curry powder, vinegar and olive oil, whisk till combined,add salt and pepper to taste and set aside.Make the Salad:1. In a medium saucepan of boiling salted water, cook snow peas until bright green, about 1 minute. Remove fromwater and immediately submerge in an ice water bath to stop the cooking process. Drain and set aside till ready toassemble salad.2. To assemble salad, place Fresh Express® Triple Hearts in a medium bowl, add the snow peas, leftover turkey, driedapricots and the appropriate amount of dressing. Toss to combine, add the pita crisps and the freshly choppedparsley and toss one more time.3. Serve by separating the salad onto four serving dishes.
