Sweet Potato Pie w/ Crumb Topp 

3 Lg eggs room temp 1 1/4 C Cooked Sweet Potato 1 C Brown Sugar 2 1/2 Tsp Apple Pie Spice 1/2 Tsp Salt 2 Tsp Vanilla Extract 2/3 C Milk (any kind) 1 9″ Deep Dish Pie Crust Mix all ingredients until smooth. Place pie shell in oven for about 10-15 min until it begins to brown. Puur filling into crust. Topping: 1/4 C All Purpose Flour, 1/4 CBrown Sugar, 1/2 C Finely Chopped Pecans, 2 Tbls soft butter. Mix with fork until thoroughly mixed. Sprinkle on top of pie filling. Bake at 35-40 min until pie filling jiggles only slightly and knive inserted comes out clean. Coool. Serve warm or cold.
