Aunt Arline’s Tomato Soup Cake

2 C all-purpose flour4 tsp baking powder1 tsp baking soda1 tsp cinnamon1 1/2 tsp allspice or nutmeg1/2 tsp cloves 1/2 C shortening1 1/3 C sugar1 can condensed tomato soup2 eggs1/4 C water

Optional:

1 C nuts, 1 C raisins or 1 C dates)

Note:

If dates are used, sprinkle w/ 1-2 TB flour while cutting and increase baking time to 40-45 minutes Cream shortening and sugar, add dry ingredients and soup alternately.Fold in optional ingredients. Bake at 350 deg for 35-40 minutes in a greased and floured 9 X 13 pan.Let stand 10 min. before removing from pan. Cool. Frost w/Cream Cheese Frosting.

Cream Cheese Frosting

1/2 C butter or margarine8 oz. package of cream cheese, softened1 lb. box confectioners sugar2 tsps. vanilla extractHave some milk handy in case needed Cream all ingredients together until fluffy. Add few drops milk if too stiff.Spread on cake. The turnip casserole is a 10-year addition to our turkey dinners, but thetomato soup cake is at least 70 years.Beverleé Beers Richardson,Hancock
