Cookin’ With Cathy: Green Peppercorn Rubbed Steak

Ingredients:1 tsp. green peppercorns1 tsp. kosher salt1/2 tsp. dried Mediterranean oregano1/2 tsp. roasted ground cumin1 large sirloin steakOlive oilDirections:Unwrap the steak and set on a parchment lined cookie sheet.Preheat oven to 425*.To prepare the rub:Combine the peppercorns, a small amount of the salt, oregano and cumin in a mortar. Using pestle, grind the spices together. Add the remaining salt.Rub steak with some olive oil and then coat with the spice rub. Set aside.Preheat a large oven-safe skillet with 1 Tbsp. olive oil over medium-high heat.When the skillet is hot sear the steak until a crust has developed, about 2 – 3 minutes. Turn it over and sear the second side in the same manner.Place the skillet into the oven and continue cooking for another 5 – 10 minutes, until desired doneness.Remove from oven, tent with foil and allow the steak to rest for 10 minutes.
