Cookin’ With Cathy: Arugula Salad with Lemon Vinaigrette 

Ingredients:Juice of 1 lemon1 Tbsp. white wine vinegar1/4 tsp. kosher saltFresh ground black pepper, to taste1/2 cup olive oilFresh Arugula, washed and driedDiced fresh tomatoesShaved Parmesan cheeseDirections:In a small bowl combine the lemon juice, vinegar salt and pepper. Whisk while gradually drizzling in the olive oil. Set aside.Divide arugula among salad plates along with tomatoes.Just before serving drizzle salad dressing over salads, then using a vegetable peeler, shave parmesan over plates.
