Molasses Whoopie Pie

1/2 c. butter, at room temperature 3/4 c. sugar 2 eggs 2/3 c. molasses 1/2 c. milk 2 3/4 c. flour 1 t. baking soda 1/2 t. salt 1/4 t. cinnamon 1/2 t. ginger Cream butter and sugar, add eggs and mix well. Add molasses and milk Mix dry ingredients and add mixing well. Chill for two hours. Preheat oven to 375 degrees. Drop onto lightly greased cookie sheets. Bake for 10 minutes Filling In a small mixing bowl combine. 1/2.c softened butter 3 c. confectionary sugar 1. t. ginger 1/4 c. molasses 2 – 3 T milk Beat until smooth and spreadable. Filling 2 4 oz. cream cheese, softened 4 T. butter, softened 1/2 teaspoon vanilla 1 1/2 cups powdered sugar 1 t. ginger BEAT cream cheese, butter and vanilla extract in small mixer bowl on medium speed until fluffy. Gradually beat in powdered sugar, and ginger until light and fluffy. Pair cooled ‘cookies’ top one with filling of your choice. Top with the other cookie. Recipe Submitted by:Linda Agren
