Cream Cheese, softened 1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained 1 cup shredded Mozzarella Cheese½ cup Grated Parmesan CheeseSea salt and pepperDash of nutmegVariations: Artichoke hearts drained well and choppedSun dried tomatoes drained well and dicedChili flakes or some hot sauceDried cranberries and candied walnuts—for puff pastry or porkMix all ingredients wellFor chicken Pound out breast of buy the cutlets Spread 1-2 tablespoons (depending on size of breast) Roll and tuck– Secure with wooden toothpicks, if desiredVariation: Dip in beaten egg whites and roll in breadcrumbs with Parmesan cheese Place seam side down in greased shallow baking dish Bake at 375 for 30 minsFor mushrooms: Remove stem Fill the mushroom cap, place in greased shallow baking dishBake at 350 for 25 minsFor puff pastry: Roll out sheet Cut into 2 inch square 1 tablespoon in center, fold like triangle or bring four corners to top for bundles Bake at 375 for 20- 25 mins or until golden brown
