4 mangoes – peeled, seeded & cubed1 cup simple syrup (recipe follows)Juice from 1 limeZest from 1 lime
In the bowl of a food processor puree the mango. While running pour in the simple syrup, lime juice and lime zest.Place sorbet mixture into the bowl of an electric ice cream maker and process for 35 – 45 minutes. Remove prepared sorbet from ice cream maker, put into a container and place in freezer for 1 hour. Serve.Simple SyrupRecipe courtesy Cathy Speronis
1 cup granulated sugar1 cup water
In a medium saucepan combine water and sugar. Bring to a simmer over medium-high heat. Cook stirring until the sugar is completely dissolved. Remove from heat. Pour syrup into a bowl and cool completely. Leftover syrup can be kept in the refrigerator for one week.
