Tuna Confit 

Ingredients:1 lb. yellowfin tuna2 Tbsp. kosher salt1 Spanish onion, rough chop1 fennel bulb, rough chop2 cloves garlic1 tsp. black peppercorns1 bay leaf1 sprig rosemary1 sprig thymezest of 1 lemona few basil leavesolive oil, enough to submerge all ingredientsDirections:Rub kosher salt onto the tuna and set aside. In a saucepan, bring olive oil to a very, very slight simmer and add all the rest of the ingredients. Add tuna to simmering oil and poach for approximately 40 minutes or until the tuna is slightly pink on the inside.** Be careful of hot oil!! **
