Weight Watchers: Pumpkin Flan 

Cool weather and comfort foods were made for each other.  It’s too badthat eating too much comfort food makes us feel uncomfortable when wezip our jeans.  Jackie Conn, from Weight Watchers, shares a recipe that’s comforting and comfortable.PUMPKIN FLANServings: 8 Preparation Time: 15 min Cooking Time: 45 min Level ofDifficulty: EasyIngredients1/2 cup brown sugar (not packed) 1/2 teaspoon ground cinnamon 1/4teaspoon ground cloves 1/8 teaspoon cayenne pepper 1/8 teaspoon tablesalt16 oz canned pumpkin1 cup fat-free evaporated milk3/4 cup fat-free egg substitute1/4 cup orange juice8 tablespoons light whipped topping1/2 medium orange, cut into 8 thin wedgesInstructionsPreheat oven to 350°F.Stir together sugar, cinnamon, cloves, cayenne, and salt in a largebowl. Whisk in pumpkin, milk, egg substitute, and orange juice: divideamong eight 6-ounce custard cups.Set custard cups in a high-rimmed roasting pan and pour boiling wateraround custard cups to a depth of 1 inch. Bake until custard is firmaround edges and slightly puffed, about 45 minutes. Remove cups fromwater (being careful not to burn yourself), cool completely, cover,and refrigerate.
