Cranberry Apple Stuffed Pork ChopsServes 2Ingredients:12 oz. boneless pork, cut into chops at least 1” thick2 teaspoons onion, minced½ cup apple, diced¼ cup celery, diced½ cup apple juice½ cup cranberry juice1 ½ teaspoons cornstarch2 ½ teaspoons brown sugar¼ teaspoon black pepperDirections:Combine apple, celery and onion in a bowl and mix well. Set aside. Carefully slice the pork chops lengthwise going down the center. Do not cut it completely in half, slice it about 3/4 of the way down the pork chop so you create a pocket. Stuff each chop with about 3 teaspoons of the apple mixture. In another bowl, combine apple juice, cranberry juice, brown sugar, pepper and cornstarch. In a frying pan, melt 1 tablespoon of butter over medium-high heat, add pork chops and brown for about 5-7 minutes on each side. Reduce heat to low then add juice mixture. Cover and simmer until sauce thickens and pork chops are cooked to your desired doneness.
