Recipe submitted by Linda Hoglund. This recipe placed fourth in a national competition. Ingredients:1/2 cup chopped orange and yellow peppers1/2 cup chopped onion1/2 cup sliced celery1 clove of garlic, chopped3/4 cup melted butter1/4 cup cooking sherry or white wine substitute2 eggs1 cup bread crumbs1 cup crushed Ritz crackers1 cup Maine shrimp1 cup Maine crab legs1 lb. Maine scallopsDirections: In a hot frying pan, take about 4 tablespoons of the melted butter and add the peppers, celery, onions, and garlic. Let cook until about three quarters of the way done. Add the seafood and cook for 5 minutes. Add the sherry and cook for another five minutes. In a mixing bowl, add the bread crumbs and the Ritz crackers then take the contents of the frying pan and add to the bread crumb and cracker mixture. Add the rest of the butter and the 2 eggs. Stir gently but mix well. Add salt and pepper to taste. If it’s too dry, add more melted butter. If it’s too wet, add more Ritz crackers. You can put this stuffing on pork chops, fish, mushrooms, turkey or chicken, or even as a casserole. Bake in 350 oven for 15-20 minutes until golden brown on top and heated through.
