Father’s Day Recipes

Yield: 8 servings

7 oz. Baby Spinach, washed and dried
4 oz. Baby Arugula, washed and dried
4 oz. mushrooms, cleaned and sliced
red onion, thinly sliced
1 cup seasoned croutons
4 slices thick-cut bacon
1 medium shallot, minced
1 medium garlic clove, minced
3 Tbsp. Brown Sugar
cup Cider Vinegar
cup Olive Oil
Salt and Pepper

Place the spinach, arugula, mushrooms, onions and croutons in a large bowl. In a medium skillet over medium heat, render the bacon fat. When the bacon is crisp, remove it from the pan and drain on paper towels. Pour off all but 1 Tbsp of the bacon fat. Add the shallots and garlic and cook until soft 1-2 minutes. Add the brown sugar and blend. Remove from heat and whisk in the vinegar and oil. Season with salt and pepper. Pour immediately over the greens and toss. Crumble the bacon over the top. Serve immediately.
