Father’s Day Recipes

Yield: 10 servings

2 lbs. Red Potatoes, washed and cut into 1 pieces
2 cloves garlic
1 cup Mayonnaise
2 Tbsp. white vinegar
2 Tbsp. grated onion
3 oz. crumbled blue cheese
2 hard boiled eggs, cleaned and diced
1 tsp. sugar
tsp. salt
tsp. ground black pepper
minced chives

In a 4-quart saucepot, cover potatoes and garlic cloves with cold water and bring to a boil over medium-high heat. As soon as they boil add 1 Tbsp. kosher salt and cook on a low boil until potatoes are tender, about 8 – 10 minutes. Drain and cool slightly. While potatoes are cooking, in a large bowl combine the mayonnaise, vinegar, onion, blue cheese, eggs, sugar, salt and pepper. Add the warm potatoes and toss gently. Place in refrigerator for 2 hours until chilled. Serve garnished with chives.
