Turkey Chili

Yield: 6-8 servings

1.3 lbs. ground turkey (85/15 fat ratio)

2 Tbsp. olive oil

1 cup finely diced onion

2 cloves garlic, minced

1 – 15 oz. can tomato sauce

1 – 15 oz can light red kidney beans

2 Tbsp. chili powder

2 bay leaves

1 tsp. cumin

1 tsp. ground coriander

tsp. marjoram or oregano

tsp. kosher salt

1 tsp. sugar

2 Tbsp. tomato paste

In large skillet saut onions in olive oil over low heat until translucent but not browned 5- – 10 minutes. Add minced garlic and cook until fragrant, 1 minute. Add ground turkey and cook increasing heat to medium-high. Continue cooking turkey, breaking up any large pieces until browned. Decrease the heat to low and add the remaining ingredients. Cover and simmer for 15 minutes, stirring occasionally. Serve over rice, pasta or use for chili dogs.

Shrimp Nachos Recipe Summary

1 lb Maine shrimp, or 20 count shrimp cut into pieces

1 bag Tortilla chips

1 – 15 oz can seasoned black beans, drained and rinsed

1 small can chopped green chiles

1 jar mild salsa

tsp. lime zest

2 tsp. lime juice

1 cup shredded Mexican cheese

1 Tbsp. chopped fresh cilantro

Heat oven to 350*. Lay half bag of tortilla chips on a large ovenproof platter. Combine salsa with lime zest and juice. Sprinkle half of black beans, green chiles, salsa and shrimp on top. Sprinkle top with half of cheese. Place in oven and bake for 5 minutes until ingredients are heated through and cheese is melted. Serve warm.

Spicy Wings Recipe Summary

4 lbs chicken wings

2 Tbsp. olive oil

Kosher salt

Fresh ground black pepper

1 – 12 oz bottle of hot sauce

cup unsalted butter

Blue cheese dressing

Celery sticks

Preheat oven to 400*. Line a large rimmed baking sheet with aluminum foil. Place an oven proof cookie rack inside of prepared pan. Rinse chicken wings under cold running water and dry with paper towels. Place the wings in a large bowl, add olive oil and toss to coat. Spread wings on cookie rack apart and season both sides with salt &amp: pepper. Place them in the oven and bake for 20 minutes. Meanwhile heat hot sauce and butter in a 1 quart saucepan over low heat. Remove wings from oven, turn them over and place back in the oven for 10 minutes. Remove wings from oven and dip them in the hot sauce/butter mixture. Place wings back on rack and into the oven for an additional 10 minutes. Remove wings from oven, dip in hot sauce mixture a second time and place on serving platter. Serve with blue cheese dressing, celery sticks and extra dipping sauce.

Maple Monkey Bread Recipe Summary

2 – 12oz cans of refrigerated buttermilk biscuit dough

6 Tbsp. unsalted butter

2 Tbsp. maple syrup

1 cup packed light brown sugar

cup chopped pecans

3 tsp. cinnamon

tsp. nutmeg

1 cup confectioners sugar

1 Tbsp. maple syrup

1 Tbsp. milk

Preheat oven to 350*. Spray a bundt pan with non-stick cooking spray. Melt butter in a small saucepan with 2 Tbsp. maple syrup. Remove from heat. Mix brown sugar, pecans, cinnamon and nutmeg in a medium bowl. Cut biscuits into quarters. Dip biscuit pieces into butter mixture and then into brown sugar mixture coating evenly. Place into bottom of bundt pan. Continue coating biscuit pieces and layering the pieces inside of the bundt pan. When all of the biscuit pieces have been used, sprinkle remaining brown sugar mixture over top. Place into center of oven and bake for 35-40 minutes until risen and golden brown. Remove from oven and allow to cool for 10 minutes. Unmold bread onto a serving plate. Mix confectioners sugar, maple syrup and milk in a small bowl until smooth. Drizzle over the top of monkey bread and serve.
