Butternut squash bake

4 cups Butternut squash cubed and boiled or micro waved until tender

2 cups chopped tomatoes—fresh or canned

Variationadded zesty green chilies, garlic,

1 cup of cheese shreddedcheddar, asiago

Mix and bake for 20 minutes @ 350

Chicken pesto

4 Chicken breast

2 cups plain yogurt

1 cup pesto

Mix pesto &amp: yogurt

Cover chicken and marinate 2-8 hours

Place in a glass or casserole dish

Bake @ 350 for 30 minutes

Also excellent with swordfish.


Orzo find in pasta section

Cook according to package

When drained and hot toss with any of the following:

Chopped olives, pimentos, sun dried tomatoes, regular tomatoes, feta cheese, Parmesan cheese, and Italian salad dressing

(I like olives, feta &amp: a cup of Italian dressing.)

Pepper &amp: sea salt to taste
