Prep Time: 20 minutes
Cook Time: 10 – 12 minutes
Yield: 45 cookies
1 cup unsalted butter, softened
1 cup sugar
1 tsp. vanilla
tsp. almond extract
2 cups all-purpose flour
Assorted lifesavers, separated and pulverized in a food processor
In bowl of mixer beat together butter and sugar until creamy. Add egg, vanilla, almond extract and salt: mix well. Add flour gradually until dough is incorporated. Divide dough in half: wrap in plastic food wrap. Refrigerate until firm, one to two hours.
Preheat oven to 350. Prepare cookie sheets – lightly grease or line with parchment paper. Remove half of dough from refrigerator and roll out on a lightly floured surface to 1/8": thickness. Cut with 3": cookie cutters and place 1": apart on prepared cookie sheets. Use small cookie cutters to create holes in cookies. Using a small spoon, fill holes with different colored lifesavers. Bake in preheated oven for 10 – 12 minutes until edges are golden and candy is melted. Allow cookies to cool. Repeat with second half of dough.
To make ornaments out of the cookies: Make a small hole at the top of each cookie with a skewer before baking. Use thin golden string to make a hanger at the top of each cookie.
