Big G’s Hearty Tomato Soup 


1 large carrot, diced

1 large onion, diced

2 med. Green peppers, diced

4 large stalks celery, diced

1 teaspoon black pepper

1 teaspoon salt

2 tablespoons brown sugar

1 tablespoon crushed garlic

1/3 cup olive oil

1 quart chicken stock

2 12oz. cans tomato paste

1 28oz. can diced tomatoes


Saut vegetables in oil and garlic until tender. Add salt and pepper, chicken stock, and sugar. Bring to simmer for 10 minutes. Add tomato products and simmer another 10 minutes. Serve and enjoy!
