8 oz. Boneless Chicken (breast or pieces)
2 Tablespoons of Capers
1 Tablespoons Fresh Chopped Garlic
2 oz. White Wine
2 oz. Lemon Juice
2 Tablespoons of Butter
Flour Seasoned with Salt and Black Pepper
1 Tablespoon of Olive Oil
1.Add 2oz. light olive oil in a saut pan over medium high heat.
2.Dredge chicken breast in the seasoned flour, shake off excess flour.
3.When the oil starts to smoke slightly, gently lay the chicken in the pan and brown on both sides.
4.When chicken is brown and almost cooked through, add garlic to the pan.
5.Allow a few seconds for the garlic flavor to develop then add wine, lemon juice and capers.
6.Simmer until the liquid is reduced to about of its original volume.
7.Turn heat down to low, add butter and allow to melt.
