Sea Dog Brewing Company’s Lemon-Basil Haddock 

juice and zest from one lemon
1 cup chopped basil (two bunches)
cup chopped parsley (one bunch)
half loaf white bread, diced and crust removed
1 cup melted butter
salt and pepper

4-8oz. Haddock filets

Extra chopped parsley and some diced red pepper for garnish

Place half the basil, parsley and diced bread in food processor and pulse. Repeat with other half. Then place the mixture into a bowl and add the lemon juice and half the melted butter. Mix together and add salt and pepper to taste. Divide the mixture into fourths and top each piece of haddock with basil crust and drizzle with the rest of the melted butter. Serve with rice and vegetables. Garnish with chopped parsley and diced red pepper.
