Sea Dog Brewing Company’s Chocolate Nachos

Ingredients:
1 bag unsalted corn chips
2 cups milk chocolate sauce
cup confectionary sugar
1 pinch cinnamon
cup blueberries (Black olives)
2 kiwis, diced (green peppers)
1 pint strawberries, hulled and diced (tomatoes)
1 14oz. tub Mascarpone cheese
1 teaspoon green food coloring
cup white chocolate (for grating)
juice from one lemon
cup granulated sugar

Directions:
Put corn chips into large bowl and cover with sugar and cinnamon. Toss to coat the chips. Remove the coated chips and place on platter. Keeping the remaining confectionary sugar and cinnamon in bottom of bowl, add mascarpone cheese and fold till mixed thoroughly. Remove half and set aside. Add green food coloring to the bowl and fold till color is light green, add more dye if needed then set aside. In a small bowl add diced fruit, granulated sugar, lemon juice and blueberries. This can all be made the day before the party.

To assemble:
Take platter of dusted corn chips and drizzle chocolate sauce over the top, add fruit mix to the top of chocolate sauce. On one side place the white Mascarpone cheese and the other the green Mascarpone cheese and garnish with a sprig of mint and shaved white chocolate.
