Hillman’s Bakery’s Pumpkin Whoopie Pies

Cake Ingredients:
1 cups sugar
cup shortening
2 tablespoons flour
2 teaspoons salt
2 teaspoons baking soda
teaspoon cinnamon
teaspoon ginger
teaspoon nutmeg
3 cups flour
2 teaspoons baking powder
3 eggs
3 cups pumpkin pie filling
3 cups buttermilk

Directions:
1.Preheat oven to 350.
2.In a large mixing bowl, add first 8 ingredients and mix until all incorporated.
3.Add eggs and continue to mix until smooth.
4.Add pumpkin pie filling and mix.
5.Add buttermilk and mix.
6.Add remaining flour and baking powder, mix until smooth.
7.Scoop onto lightly greased baking sheets.
8.Bake at 350 for approximately 8-10 minutes. Cakes are done when inserted toothpick comes out clean.
9. Remove from oven and let cool.

Cream Cheese Frosting Ingredients:
2 8oz. packages cream cheese
cup margarine
1 cup shortening
7 cups powdered sugar
1 teaspoon vanilla
1 tablespoon milk (variable)

Directions:
1.Using a mixer, cream margarine, shortening, and cream cheese.
2.Add vanilla and sugar, mix until smooth.
3.Add enough milk to soften mixture to a creamy frosting.
4.Spread frosting on one half of the whoopie pie cakes.
5.Place other half of whoopie pie cake on top and enjoy!
