Haddock Wrapped in Smoked Salmon & Topped with Chive Vinaigrette 

1 lb. fresh haddock filet, cut into 3 pieces
1/3 lb. sliced smoked salmon
3 tablespoons extra virgin olive oil
lemon juice to taste
cracked black pepper to taste

1.Preheat oven to 450.
2.Arrange salmon slices into 3 separate layers.
3.Place haddock on salmon slices, wrapping around the filet.
4.Place on cooking pan and cook in 450 oven for about 15 minutes.
5.Serve, top with chive vinaigrette(recipe follows) and enjoy!

Chive Vinaigrette

3 tablespoons white wine vinegar
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon sugar
1/4 cup extra virgin olive oil
3 tablespoons chopped chives
cracked black pepper to taste

1.Mix all ingredients together until well blended.
