Spring Creek BBQ’s Carrot Cake With Cream Cheese Icing 

4 eggs
1 1/2 cups oil
2 cups all purpose flour
2 cups granulated sugar
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1/4 teaspoon salt
3 cups carrots, grated
1 1/2 cups pecans or walnuts, coarsely chopped

1.In a small bowl, beat together the eggs and oil.
2.In a large mixing bowl, combine flour, sugar, baking soda, baking powder, cinnamon and salt.
3.Add egg mixture to dry ingredients and mix well.
4.Stir in grated carrots and pecans or walnuts. Mix well.
5.Pour into greased and floured 13×9 baking pan.
6.Bake in preheated oven at 350 for 50 minutes or until toothpick comes out clean when inserted in the middle of cake.
7.Cool completely then frost with cream cheese icing(recipe follows).

Cream Cheese Icing

1 16oz. box powdered sugar
1 8oz. package cream cheese
1/2 cup butter, softened
1 teaspoon vanilla

1.In a mixing bowl, combine all ingredients and beat until smooth.
