Rhumb Line’s Summer Gazpacho 

1 28oz. can diced tomatoes
1 46oz. can tomato juice
1 large cucumber, diced
1 medium red onion, diced
1 medium green bell pepper, diced
1 medium red bell pepper, diced
2 tablespoons finely chopped garlic
8-10 shakes Tabasco
1 tablespoons salt

In a large bowl, mix together the tomatoes, tomato juice, cucumber, red onion, green pepper, red pepper. Add the seasonings and taste for heat. Of course, you can add more Tabasco if you like it spicy. The vegetables will let out a lot of water so the salt is necessary to keep the soup properly seasoned. Adjust the salt to your taste. Chill and serve. You can garnish this with fresh crabmeat, shrimp, lobster, sour cream, smoked seafood use your imagination. Enjoy!
