Opus’ Spinach Salad with Candied Walnuts and Warm Brie Fondue

*** Serves 4 ***

4 cups cleaned baby spinach
4 tablespoons vinaigrette, whatever is handy
4 teaspoons sun dried cranberries
4 teaspoons chopped, cooked bacon
4 teaspoons red onion, julienne cut
4 teaspoons candied walnuts
1 granny smith apple, sliced
1 cups Brie fondue, recipe follows

1.Mix first 6 ingredients in a large salad bowl.
2.Divide salad mix among 4 plates.
3.Arrange apple slices on plates.
4.Drizzle with warm Brie fondue.

Brie Fondue:

cup heavy cream
1 cup Brie cheese

1.Heat heavy cream over low heat.
2.When hot, stir in Brie cheese, stirring frequently until melted.
3.Season lightly with salt and pepper.
