Bar Harbor Club’s Warm Chocolate Popovers 

cup sugar
2 eggs, beaten
cup cocoa powder
cup all propose flour
cup butter
2.25oz. semi sweet chocolate
cup bourbon

2 cups heavy cream
4oz. butter
4oz. semi sweet chocolate, chopped
teaspoon vanilla extract
cup sugar

For the popover combine chocolate, butter and bourbon, melt over low heat. Whip eggs and sugar and slowly add melted chocolate mixture to whipped eggs, tempering mixture. Next add sifted flour and cocoa powder.

For the ganache combine butter and chocolate and melt together and add heavy cream, sugar and vanilla extract. Whisk over medium heat until thickened.

Fill 3&quot: ring molds way. Add a tablespoon of ganache and a 1/2oz. piece of chocolate and then cover with more batter and bake at 350 for 5-8 minutes. If oyu don’t have ring molds, you can use a soup can.

Best served warm with a scoop of vanilla ice cream on top and crme anglaise` on the bottom.
