River Drivers’ Ooey Gooey Chocolate Layer Cake 

2 packages brownie mix of your choice, or double a homemade recipe
jar of peanut butter of your choice
chocolate ganache

Chocolate Ganache:
1 cup heavy cream
1 cup semi-sweet chocolate

Place chocolate in a mixing bowl. Warm heavy cream and pour over the chocolate. Stir with a whisk until melted, smooth and creamy. Let mixture cool to room temperature.


Make enough brownie batter to make 3 rounds or 2 squares that are about -3/4 thick when cooked. Cook brownies according to directions. When brownies have cooled, place one layer on a plate and cover the top with your favorite peanut butter. Place another layer of brownie and add another layer of peanut butter. Place the final layer on top. Pour/spread chocolate ganache over the top of the cake. Place cake in refrigerator to set. Serve Ooey Gooey Chocolate Layer Cake at room temperature. Shave white chocolate pieces over the top for a finishing touch.
