Oscar Omelette

3 eggs, whipped
2 oz. crabmeat
3 oz. shredded cheese
3 asparagus spears
2 oz. hollandaise sauce
1 oz. butter

Pour eggs into 6&quot: greased saut pan over medium-high heat. Sprinkle crabmeat on egg mixture. When eggs look more solid than liquid, flip eggs over to cook both sides. Flip back over and sprinkle cheese on the eggs then fold in half. Put eggs on a plate and top with asparagus spears and hollandaise sauce.

Stuffed French Toast

4 eggs, whipped
2 slices white bread
3 oz. flavored cream cheese
4 strawberries, sliced
maple syrup
powdered sugar

Dip bread in egg and place in pan over medium-high heat. Cook thoroughly on both sides. Remove from pan. Place one piece of cooked french toast on plate, spread with flavored cream cheese and layer with strawberries. Place second piece of french toast on top. Drizzle with maple syrup and sprinkle with powdered sugar.

Smoked Salmon Bagel Sandwich

1 bagel sliced
3 oz. smoked salmon
2 oz. flavored cream cheese
2 slices tomatoes
3 onion rings
bean sprouts
2 oz. Italian dressing

Grill or toast the bagel. Spread with flavored cream cheese. Toss bean sprouts with Italian dressing. Layer with smoked salmon, tomatoes, onions, and top with bean sprouts.
