Moose Point Tavern’s Crab Cakes 

*** Serves 4 (2 cakes each) ***

1lb. Maine crabmeat
3 cups crushed Ritz cracker crumbs
1 teaspoons dried cilantro
1 teaspoon paprika
1 teaspoon salt
teaspoon ground black pepper
1 tablespoon parmesan cheese
4 tablespoons mayonnaise
1 oz. heavy cream
1 egg
1 red bell pepper, diced
1 medium onion, diced

1.In a large bowl, mix dry ingredients together.
2.In food processor, puree approximately each of the red pepper and onion. Add the mixture to the dry ingredients.
3.Beat the egg in a separate bowl. Add to the dry ingredients.
4.Add mayonnaise, heavy cream and parmesan cheese. Using a spoon or your hands, mix all ingredients together well.
5.Add crabmeat mixing slightly until distributed throughout the cracker mix.
6.In a large saut pan, brown cakes on both sides. Transfer to a baking sheet and bake in the oven at 350 for 10-15 minutes.

Serve with sherry cayenne mayonnaise.

To make the sherry cayenne mayonnaisse, mix together 1 cup of mayonnaise, 1oz. sherry, teaspoon cayenne.
