Cafe Miranda’s Warm Dressed Radicchio Salad 

*** Serves 2 ***

1/2 head radicchio cut into wedges
1/4 cup pitted black olives (French oil cured or rinsed kalamata)
2 teaspoons capers
1/4 cup extra virgin olive oil
3 oz. Chevre cheese (that’s goat cheese kids)
2 tablespoons chopped fresh parsley
2 teaspoons coarse chopped garlic
fresh ground black pepper

Place radicchio in a 12&quot: low sided serving bowl. Break up the cheese with your fingers and spread it around on top of the radicchio. Sprinkle parsley around it. In a small frying pan place the olives, capers &amp: olive oil. On medium heat saut them for approximately 2 minutes. Carefully pour the hot oil dressing over the radicchio mix. Grind some pepper and there you go! Done! This can be enlarged to feed as many as you like. The radicchio part can be prepared hours in advance &amp: left at room temp. Heat the oil, olives and capers when you are ready to serve.
